Omelette with Wild Herbs

You have no idea how much I have been looking forward to the day I will be able to pick a handful of wild herbs and make a meal and fresh herb tea with them!

Our winters and time of frost without any vegetation are so long, and it isn´t until the end of May before we can see some green grass and leaves on trees again.

I also realized that I haven´t shared much from my cooking with herbs and generally from the life on the husky homestead for a while, so here is a recipe for my first fresh spring wild herb omelette.

Two of My Most Favorite Smoothies


Howdy all!

I am soooo behind with my blogging - or I should say with my real blog blogging, because I am actually not totally idle and mute and I did not cut off the sharing of our daily life in the woods with our huskies and pursuing of our wilderness homesteading dream!

As a matter of fact, I´ve been (what I call) "mini" blogging a lot on my Facebook page and sharing tons of pictures on Instagram. You should really check both of these hubs out, because I have some real nice pictures there and also some info on Herbs for Dogs and some natural nutrition and health care advice, etc.

Home Made Eggnog, Anyone?

I´ve shared this step by step, easy recipe for a superb eggnog last year.

It is my family´s traditional recipe and I am glad to continue in those traditions of making this eggnog every year for Christmas.

It is SO much BETTER than the store bought one, with all the egg yolks and heavy whipping cream and raw sugar whisked to a creamy consistence, flavored with fresh ground vanilla.

Creamy Home Made Cheese With Herbs And Spices


I have always loved cheese. Soft cheese, hard cheese, fresh ones and smelly ones, goat or cow, you name it.

There are recipes out there for cheese making at home, but a lot of them require long processes, coagulation, the use of rennet, cooking, etc.

Not only don´t I have the time for those, but in our household, we like things simple and as natural and fresh as possible.

Chickpeas On Red Paprika With Creme Sauce

When I was a kid, one of my most favorite meals that my Mom used to make was a traditional Czech recipe called Chicken On Red Paprika. 

Latly Jachym and I have both been doing a lot of experiments with new recipes and turn to more and more whole foods, legumes, whole spices, etc.

Chickpeas were always our favorite, but we´d use them in more "exotic" recipes, while nowdays they are integral part of chillis, sauces, burgers, and even pancake batters.

Fantastic Dandelion Pesto

Over the years of living on the wild side of the Vattudalen lake, I have learned to utilize wild herbs for many different uses, mostly for home made remedies and cures for both, the dogs and us, from different teas to tinctures, salves, etc. But many of these amazing plants have sparked my interest more and more in my kitchen.

We basically use nettles the entire summer instead of spinach, which doesn´t do well in our vegetable garden and I try to avoid the one from the shops due to the heavy pesticide used when growing it.
Dandelion leaves often substitute rucola in salads and on sandwiches and I also add chickweed for its super delicious taste and health benefits. 

Those of you who read my blog regularly know I´ve previously posted about our use of various dandelion parts in our dogs´ feeding program, but I realized that I actually haven´t blogged much about wild herbs in the use of my own kitchen.

So I decided to start off with this fantastic tasting, super easy recipe for dandelion pesto.

Blueberry Buttermilk Healthy Breakfast Cake

I must confess I got inspired by another recipe for a blueberry buttermilk breakfast cake, BUT I heavily modified it by substituting most ingredients and I changed and adjusted amounts as well.

So here is my version of this delicious, but not so full of guilt sweet breakfast or morning snack. And since I eat sweets once a week, I feel even less guilty - because it´s Friday and Friday is my sweet day! :)

Leftover Oatmeal Smoothie Rich In Antioxidants

In our home, we often have leftover oatmeal from the breakfast. We are big on oatmeals and different cereal porridges, especially over fall and winter time. In a land with 7 months of snow and subzero temperatures, it is an excellent and valuable nutrition, that warms you from inside out and prepares you for the day spent mostly outdoors, running dogs and doing all kinds of chores around the farm.

We do porridges mostly from oat flakes, but often use also pearled graham, barley, polenta, rice flour, and add all kinds of seeds, nuts, almonds, sometimes raisins and apples. And of course the super healthy, my all time favorite cinnamon :)

Hashbrown Casserole

Ingredients:

1 (2 pound/1kg) package frozen hash browns OR coarsely grated potatoes
1 cup sour cream
1 can cream of chicken soup OR 2 chicken bujon cubes melted in cup of boiling water and a bit of creme
1/2 cup margarine or butter
1 large chopped onion
3 minced cloves of garlic
1-2 cups grated cheese (cheddar works best)

Two People, Two Dogs and Six Loads of Sh...PEEP

I truly regret not having pictures to go along with this post. They would make you laugh. They would make you feel inspired. And most definitely they would make you wonder about our mental health.

Let me assure you that we are mentally fit. At least we think so, although I guess that it could be a topic for debate, because living alone in the middle of nowhere with 60 dogs, not seeing much of other human beings and not leaving the land of woods and lakes for literary years, can actually effect our sanity.

Weather crazy or not, we at least know for sure, that we are physically fit. We have tested that numerous times and ultimately yesterday.

Super Easy Taco Pie Perfect For A Movie Night

It was Friday yesterday. Friday is the only day in our rugged, untraditional way of life, that has it´s iron rules. Not only is it a maintenance day at the kennel, but it became famous for it´s Friday Pizza and Movie Nights.

All our dog handlers and kennel help, but also guests and visitors, who happened to stay over night on Friday, have witnessed it.

Our kennel crew swears by the Friday Pizza and Movie night and no matter how late we all manage to get to the living room after a busy day, we always long for this social event.

Easy To Make Delicious Homemade Eggnog


This eggnog recipe comes from my homeland Czech Republic. Every family seems to be using a tad bit different ingredients and amounts of them, depending on how sweet, how creamy, or how alcoholic you want the end result.

This is such a simple recipe, calls for no cooking or difficult preparations and doesn´t require many ingredients.

You can double the condensed, sweetened milk, or you can use milk instead of whipping cream, and you can also use 1/3 or 1/2 less of the rum.

1 condensed, sweetened milk
1/2 l golden rum (the Czech Tuzemak is the best)
1/4 l whipping cream
4-6 egg yolks
100g brown sugar
3 heap tbs vanilla sugar

--------------------------------------------------

1. Whisk egg yolks with brown sugar until smooth.


2. Slowly add rum, while stirring and whisking


3. Once all rum is in, toss vanilla sugar into the blend and stir some more





4. Pour in the entire condensed milk, stir properly until you reach a thick creamy consistence.


5. Last, add cream to make the eggnog a bit thinner.



6. Pour into bottles, close and store on a cool dry place. Letting it rest for at least a few days will make all the ingredients blend nicely and the eggnog will get the right aroma, taste and consistence.



My tip: I like to close the bottles with used wine corks for even more home-made touch. You can tie a bow around the shoulder of the bottle and decorate it with some Christmas ornaments, a spruce branch, mini cones or rose buds. You can also label the bottle with handmade writing or personalized message.

Now, once the eggnog is ready, Christmas can start! :)

Vegetable Stew With Chicken And Sausage

VEGETABLE STEW WITH CHICKEN AND SAUSAGE

recipe by Katerina Paleckova

perfectly suitable for canning and slow cooker (Crock Pot)

2 large onions
2 large cloves of garlic
200g chicken breast
4 standard hot dog sausages
2 large carrots
1/2 of medium sized turnip
8 medium to large potatoes
200g herricots
2 medium sized red beets

2 table spoons flex seed
1,5 tea spoons psyllium husk
½ cup oat flakes
2-3 table spoons buckweed flour
1 cube vegetable stock
2 tea spoons salt (add more if you want)
½ tea spoon ground black peppar
2 table spoons ground sweet red peppers
½ cup cooking cream (I use 15% fat)
water as needed (at least 2 cups)
1,5 table spoons oil

Peel carots, potatoes, turnips and red beets.
Dice potatoes, turnips, red beets, onions and chicken into cubes (about 1 inch large)
Slice carrots lengthwise, then cut into half circles
Chop garlic into tiny pieces
Slice sausages into about half inch circles

In large pot, heat oil and add 2/3 of chopped onions. Stir once in a while and let onions soften. Add all the chicken, season with red peppers, black peppar, salt and vegetable stock.
Add rest of onions and red beets. Cook for about 5 minutes, stir occassionally. Add turnips and carots, flax seed and water and let boil for about 5-10 minutes. Then add potatoes and sliced hot dogs/sausages, psyllium husk and oat flakes. Let boil for another 5 minutes, stir occassionally. Take part of the formed sauce out and put it in a small bowl. Add flour, whisk properly and pour back into the pot. Stir well. After about 2 minutes, add cream, harricots, rest of onions and chopped garlic. Cook until all ingredients are soft. You can add more water, salt or spices if needed.



This is my new best friend. My Crock Pot. My life saver. The vegetable stew recipe was the very first one I tried to cook in it.

For Crock Pot version, use the same amount of ingredients, but layer them in the following order:

carrots first, then red beets, followed by turnips, onions, potatoes, harricots, chicken meat, sausages and garlic. Add salt and pepper, oat flakes, flex seed and psyllium, then pour water over it. Use half amount of the original recipe (above). Turn on low for 6 hours or high for 4 hours. I don´t add the flour when I make this meal in the crockpot. You can add the cream during the last hour of cooking.



That´s it. Super dooper. Piece of cake.



This is how the final product looks like in a soup bowl. Very colorful.

And one more tip: If you are extremely busy and want to save even more time, cook the meal in the slow cooker, then put it in jars and can it. This way you can create make-ahead meals without actually cooking them yourself (the Crock Pot cooks for you while you work, sleep, jogg, or train dogs in my case :)), and then you just stick the final product in a jar and can it.

I am one happy camper, my dog handlers are not hungry and there is always a great smell inside the house when I come tired from a training run, resembling mom´s Sunday lunch cooking when I came home from one of my many adventures. Oh, those memories! :)

Poor Man's Enchiladas



Ok, if you are rich, you can also read this! :)


The reason I named this recipe Poor Man´s Enchiladas is simple - we were out of ingredients. In fact, our fridge had a hungry empty stomach and all we had were a few left overs of this and that.

You may ask where is the problem and wonder if we are really that lazy to go get some groceries. 

With 25 miles each way of a rough, dirt forest road and the lifestyle we live, grocery shopping whenever we feel like it is a luxury we do not have. Actually, this makes us think more and plan meals  and shopping, and be creative! :) 

So, after inspecting and evaluating what we have, and really really wanting to make something Mexican as it was Cinco de Mayo that day, I assembled these simple Poor Man´s Enchiladas :)

And they were great!


For 2 persons I used:

1 large chicken breast
1/2 red bell pepper
1/2 a can of corn (about 200g)
1 small onion
Mexican Food Spice Mix (from Dollarstore) - use whatever amount you find right and you can use any spice mix suitable for enchiladas, tortillas, or other Mexican food)
a chunk of cheese (I had a leftover piece, normally I would use chedar, but remember - this a poor man´s/leftover recipe :))


On two tea spoons of oil, I softened the onion diced in tiny pieces, then added diced chicken, bell pepper and corn, properly spicing it up. This is done very quick.


You can use store bought tortillas, but here´s how Jachym (the bake master in our house) makes ours:


2 cups spelt flour (you can use wheat if you want, we just try to avoid wheat flour as much as we can)
1 tsp baking powder
1/2 tsp salt
2 tbs olive oil
1/2 cup warm water

Mix flour, baking powder and salt. Add olive oil and stir well. Put in warm water 1 table spoon at a time until dough can be gathered into a ball. Add more water if needed one spoon at a time. Knead on floured surface 15-20 times. Let dough rest for 15 minutes, then divide into 10-12 equal portions and shape into balls. On floured surface roll out ball from center into a circle. Roast on ungreased pan over medium-high heat on each side about 30 seconds or until puffy. We usually leave them in the oven to keep them warm.

As you see on pictures - they don´t need to be perfectly round-shaped, so don´t be too hard on yourself! :)



Fill each tortilla with the meat and vegetable mixture, roll them and place them side by side in a baking ceramic dish.


Sprinkle them with whatever cheese and amount of cheese you have available. I also sprinkled a bit of the spice mix over.


Since the ingredients are all cooked and ready, you don´t need to bake it in the oven for long, or on high. Just enough to melt the cheese and warm up the tortillas. And add that lovely crispy edge to them :)

Woala! And serve.


You can make pretty much any meal even with little ingredients. Just use your imagination and don´t give up! :)
