I got this simple, yet super tasty and healthy recipe from a friend, so I thought to share it.
Do you also have cravings for fresh vegetables and juicy salads this time of the year? I experience this every spring, when the long cold winter nights finally ease down on us in our part of the world.
Alright, here it goes:
1 bundle of fresh Rucola
2 tbs extra virgin olive oil (if you don´t have it, you can substitute it with other oil, but this is a healthier option)
Juice squeezed out of 1 Lemon or 2 Limes
Pinch of salt
pinch of fresh ground pepper
Bled the oil, lemon or lime juice with salt and pepper
Peal avocados and chop into nice cubes or slices
Blend avocados with rucola properly
Add dressing made from the oil, juice and spices
That´s it! Super easy, super fast and super healthy. Buon Apétit!
